Serve it with warm rice, sambal, and fresh cucumber. The yellow color looks festive, but the method is calm and repeatable for a weeknight if you marinate ahead.

Ingredients

  • 800 g chicken, cut into serving pieces
  • 4 cloves garlic
  • 6 shallots
  • 3 cm fresh turmeric (or 1 teaspoon ground turmeric)
  • 2 cm fresh ginger
  • 1 teaspoon coriander seeds (or ground coriander)
  • 1 1/2 teaspoons salt
  • 100–150 ml water, for simmering
  • Cooking oil, for deep or shallow frying

Directions

  1. Blend or pound the garlic, shallots, turmeric, ginger, and coriander with a splash of water into a smooth paste.
  2. Rub the paste and salt thoroughly over the chicken, including under the skin where possible. Rest 20 minutes at room temperature (or longer in the fridge).
  3. Place the chicken and any leftover marinade in a saucepan. Add just enough water to moisten. Simmer uncovered 10–15 minutes, turning once, until the liquid mostly evaporates and the spices cling to the meat. Cool slightly.
  4. Heat oil over medium heat (about 170–180°C / 340–350°F). The oil should sizzle steadily when a piece is added.
  5. Fry the chicken in batches without crowding until deep golden and cooked through, about 6–10 minutes depending on size.
  6. Lift onto a rack or paper towels to drain well so the skin stays crisp.
  7. Rest 2–3 minutes, then serve hot with rice and sambal.

  • Simmer until nearly dry before frying so the coating browns instead of steaming.
  • Pat the chicken surface dry after simmering for a crispier fry.
  • Use medium heat; too hot and the outside burns before the inside is done.
